Raspberry oatmeal

BREAKFAST Raspberry oatmeal topped with nuts and raspberries

It's finally weekend, so why not celebrate it with this lovely bowl of wonderful, tasty and healthy raspberry oatmeal?!  Just looking at that dark pink gorgeous color makes me happy, and the taste was even better (: The weather today is so good here in Denmark, the sun is shining and the sky is blue, so i think i'm going to take a good long run after posting this. Nothing better to kickstart the day, it leaves me with so much good energy and positivity. Tonight i'm planning a trip to the cinema with some of my best buddies, really looking forward to get some time with my girls, I miss them alot! We really haven't seen much to eachother during the exams, to busy studying. I'm so glad that it's over verry soon! I wish you all a wonderful, happy and healthy weekend - Much love! (:

Ingredients
1 serving

The oatmeal
0,5 cup of rolled oats
1 cup of raspberries (I used frozen)
1 cup of water or milk
Vanilla extract
Sweetener (Stevia, honey etc.)

The topping
A couple of raspberries
A handful of mixed nuts


Start by heating up the berries in the microwave, until the consistency is nice and smooth (about 1 minute). Now, mix the rest of the oatmeal ingredients into it, and put it in the microwave again for about 2-3 minutes, until the consistency is the way you like it. At last, top it with a bit of raspeberries and nuts. There you go - ready to be enjoyed!

Coconut oatmeal

BREAKFAST Coconut oatmeal topped with banana, coconut and flaxseeds

I really love experimenting with my oatmeal at the moment, and this must be one of my favorites! I really love coconut, and toghether with the sweet banana it really brings out all the amazing flavours! It actually reminds me of the beach, verry exotic and yummy (: Coconut is also super healthy for you. It's verry rich on lauric acid, which is known for being verry antibacterial and antifungal. It also contains zero trans fatty acids, which is pretty amazing! I put half of the banana in the porridge, and use the other half as topping. If you want to, you can add some extra sweetener such as honey or stevia. I cook my porridge in the microwave, super easy and just as good! Cook it for about 2-3 minutes.

Ingredients
1 serving

0,5 cup of oats
1 cup of water (you can also use milk)
2 Tbsp of desiccated coconut

1 banana (half in the porride half for topping) 
Flaxseeds, cherries and a bit of coconut for topping
Optional: sweetener such as honey or stevia

Dreamy chocolate oats

BREAKFAST Chocolate oatmeal topped with banana, raspberries and sunflower seeds

Good morning! Just wanted to share this amazing breakfast with you guys. Actually, it's the first time i'm trying the famous chocolate oats, and i am not disappointed! It was so chocolaty, creamy and yet still verry healthy. Cocoa is actully a fruit, and a verry healthy one! It's packed with antioxidants and flavonoids, which helps prevent cancer, diabetes and heartdiseases. Plus, it's high on fibers and protein, not bad! I will definitely be making those again! I didn't add any sweetener, i just used the sweetness from the banana, which worked just fine. Yum yum, I can still taste the creamy dreamy chocolate in my mouth, love it! (:

Ingredients
1 serving

The oatmeal
0,5 cup of rolled oats
1 cup of water or milk
2 tsp of cocoa powder
1 banana
Optional: sweetener such as stevia or honey

The topping
A handful of raspberries
Banana slices
A sprinkle of sunflower seeds

Shake it up!

BREAKFAST Smoothie topped with oats, flaxseeds, almonds and cherries
DRINK Watermelon shake with ice cubes

Yum yum yum! This was so great! In the breakfast smoothie i have raspberries, banana, salad leaves, milk and limejuice. I almost always add some kind of veggie to my smoothies, it really makes them so much more healthier, and you really can't taste it. In this one i used a verry light green sort of salad (can't remember the name), so it didn't ruin the pretty pink color (: But you can use any greens you want: Kale, spinach, carrots etc. Especially kale is incredibly healthy, so go ahead!
The watermelon shake was sooo great to! When i was in Thailand last year, we drank these everyday while lying at the pool. So delicious, healthy and refreshing! Perfect on hot summer days. The only ingredients are watermelon and ice cubes. Just throw it all into a food processor for a minute or two, and there you have it!

Today i have, guess what? Studied even more, i feel like my brain is starting to melt! I am sooo looking forward to get all these exams done! Thought i wanted to share some of todays food with you guys, it really was great (: The pancakes was super healthy, tasty and a great way to start out my day. I used wholegrain flower, baking powder, cinnamon, eggwhites, salt and skimmed milk. A great recipe, i will be making them again verry soon. The Chai latte was fantastic too, so creamy, this must be one of my favourite drinks! In the hummus i have chickpeas, garlic, olive oil, yogurt, chili, cumin, garlic, salt and pepper. It really was amazing with the beautiful veggie sticks, a great way to get those veggies! yum yum (:

Food for studying

BREAKFAST Oatmeal with peach, banana, cherries, walnuts and cinnamon

LUNCH Chickpea salad with apple, tomatoes, cucumber, zucchini, spinach, carrot and basil

DINNER Veggie stir-fry with smoked trout topped with fresh basil and flaxseeds

Hello everybody! (: Today i have been studying even more, got another examination on monday, great.. At least, I got some awesome food during the day to keep me fresh! The cherries are from my own garden, so delicious and sweet! I think that is one of my all time favourite fruits, yum! The lunch was great to, i love the combination with chickpeas and apple, so amazing! I really have a thing for fish at the moment, just can't get enough of it, and this trout i got for dinner was truly fantastic, so tasty and healthy! In the stir-fry i used what we had in the kichen: Broccoli, cauliflower, spinach, carrot, zucchini and tomatoes, seasoned with basil, thyme, chili and limejuice. Now, i will continue with my studying, bye bye, have an awesome weekend!

It's friday!

BREAKFAST Non-fat mango, passionfruit and ginger yogurt with oats and almonds
DINNER Salad with spinach, cucumber, tomatoes, pears, walnuts and fresh basil

Here are some pictures from my friday, starting with an amazing breakfast. That yogurt was so terrific, need to buy that again! after breakfast, it was time for an examination, i was pretty nervous, but it really went so well! I got top marks, so proud! (: After the examination, it was time for work, 6 hours in a clothing store, gosh, my legs are hurting! At least i got some exercise, which probably is pretty good with all that candy i am going to eat now, haha.. can't help it, it's friday! For dinner we had this amazing salad, some of my homemade fish meatballs and quinoa. The pears and walnuts tastes so amazing together, you guys really need to try that combination out! Now, i will enjoy my candy, while i'm waching some episodes of ''friends''. Bye, have a great friday! (:

Yummy Yogurt!

BREAKFAST Non-fat greek yogurt with blueberries, bananas, almonds and cinnamon

Good morning to all you lovely people! In these days i'm studying for examinations, so i need some good and healthy energy that lasts throughout the day. And this lovely breakfast really was a great way to start out my day! I got some healthy protein and calcium from the yogurt, some good fat from the almonds and some lovely vitamins and fibers from the berries and bananas. Yummy! Yogurt is one of my favorite things for breakfast, it really fills me up for a long time, and then it tastes soo good. (:

Exotic smoothie

BREAKFAST Smoothie and toasted wholeweat bread with chocolate and banana

Good morning. Today i started out my day with this delicious breakfast, super healthy and i'm ready to go! I made the smoothie of mango, grapes, papaya, pineapple, orangejuice and mint - really a great combination! I love the little twisted flavour that the mint gives. Soo good. The chocolate on the bread melted so nicely and created a wonderful creamy texture, uhm! (: The whole meal gave me about 350 kcals, which is just perfect for a good, balanced breakfast to kickstart my day.

Protein omelette!

BREAKFAST Omelette with veggies, spices and cottage cheese

Good morning guys! (: Today i started out my day perfectly with the amaaaaazing omelette - omg sooo delicious!! I used what we just happened to have in the kitchen, and it really turned out great. I just mixed up all the ingredients and decorated with the tomato and zucchini. You can also eat this for lunch, maybe with a piece of wholeweat bread. Yum yum! This recipe is filled with protein, which will keep you full throughout the day, i'll promise that!

Here is what i used

1 whole egg
1 eggwhite
50 g non-fat milk
100 g. cottage cheese
1 small carrot
1 small handfull of spinach
A bit of Red onion
1 tomato
1/4 zucchini
Paprika
Chili powder
Salt
Pepper

oatmeal, so filling!

BREAKFAST Oatmeal with pear, apple, almonds and cinnamon

Hello (: this was what i got for breakfast today, yum yum! I just looove oatmeal, so healthy and delicious. The fruits gave it a lovely sweetnes, the almonds some healthy fats and the cinnamon added some extra flavour. Actually, cinnamon also boost your metabolism, awsome! i used about 50 g. of oatmeal and 200 g. of water. Then i cooked it in the microwave for about 2,5 mins, and then topped it with 1 pear, halv an apple, a little handfull of almonds (10 g) and a sprinkle of cinnamon on the top. And there you have it, Ready to enjoy!
